Ingredients
2 cups whole wheat flour
2 medium-sized potatoes, boiled and mashed
1 small onion, finely chopped
2 green chilies, finely chopped
1 teaspoon ginger-garlic paste
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon garam masala
1/4 cup fresh coriander leaves, chopped
Salt to taste
Ghee or oil for cooking
In a mixing bowl, combine the whole wheat flour with a pinch of salt. Gradually add water and knead into a soft dough. Cover and set aside for 15-20 minutes.
In a separate bowl, mix together the mashed potatoes, chopped onion, green chilies, ginger-garlic paste, cumin seeds, turmeric powder, red chili powder, garam masala, and salt.
Divide the dough into small portions and roll each portion into a small circle.
Place a spoonful of the potato mixture in the center of the circle and bring the edges together to seal, forming a ball.
Gently flatten the ball with your hands and dust it with flour.
Using a rolling pin, roll out the flattened ball into a round paratha, approximately 6-7 inches in diameter.
Heat a tawa or griddle over medium heat and cook the paratha on both sides, applying ghee or oil, until golden brown spots appear.
Repeat the process with the remaining dough and potato mixture.
Serve hot with yogurt, pickle, or your favorite chutney.
