Ingredients
1 cup gram flour (besan)
2 cups yogurt (curd)
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1/2 teaspoon fenugreek seeds
2-3 dry red chillies
10-12 curry leaves
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste
2 tablespoons oil
1 tablespoon chopped coriander leaves for garnish
For the Pakoras (optional):
1/2 cup finely chopped onions
1/4 cup finely chopped spinach
1/2 cup gram flour
1/4 teaspoon turmeric powder
Salt to taste
Water as needed to make a thick batter

Instructions
Prepare the Pakoras (if using):
In a bowl, mix chopped onions, chopped spinach, gram flour, turmeric powder, and salt.
Add water gradually to make a thick batter.
Heat oil in a pan for frying. Drop small portions of the batter into the hot oil and fry until golden brown. Remove and set aside.
Prepare the Kadhi:
In a bowl, whisk together gram flour and yogurt until smooth, ensuring there are no lumps.
Tempering:
Heat oil in a deep pan or kadhai. Add mustard seeds, cumin seeds, fenugreek seeds, dry red chillies, and curry leaves. Let them splutter.
Making the Kadhi:
Pour the gram flour and yogurt mixture into the pan slowly, stirring continuously to avoid lumps.
Seasoning:
Add turmeric powder, red chili powder, and salt. Mix well.
Cooking the Kadhi:
Cook on low-medium heat, stirring frequently until the kadhi thickens. This may take around 15-20 minutes.
Add Pakoras (if using):
If you prepared pakoras, add them to the kadhi and let them simmer for an additional 5-7 minutes.
Garnish:
Garnish with chopped coriander leaves.
