Ingredients
2 cups thick poha (flattened rice)
2 medium-sized potatoes, peeled and diced
1 medium onion, finely chopped
1 green chili, finely chopped (adjust according to spice preference)
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
A pinch of asafoetida (hing)
8-10 curry leaves
1/4 cup peanuts
2 tablespoons oil
1 tablespoon lemon juice
Salt to taste

Instructions
Rinse the poha under running water for a few seconds to soften it. Drain the water completely and set aside.
Heat oil in a pan or kadai over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
Add asafoetida (hing), chopped green chili, and curry leaves. Saute for a few seconds until fragrant.
Add diced potatoes to the pan. Sprinkle a little salt and mix well. Cover the pan and cook the potatoes until they are tender, stirring occasionally. This may take about 5-7 minutes.
Once the potatoes are cooked, add chopped onions to the pan. Saute until the onions turn translucent.
Add peanuts to the pan and saute for 2-3 minutes until they are lightly roasted.
Now, add the rinsed poha to the pan. Mix everything gently to combine all the ingredients.
Sprinkle salt as per your taste and mix well. Cook for another 2-3 minutes until the poha is heated through.
Turn off the heat and drizzle lemon juice over the poha. Give it a final mix.
Garnish the batata poha with freshly chopped coriander leaves and grated coconut (if using).
