Ingredients
1 cup basmati rice
1 cup mixed vegetables (carrots, peas, beans, corn)
1 large onion, thinly sliced
1 large tomato, chopped
2 green chilies, finely chopped
1/4 cup cashews or almonds (optional)
2 tablespoons ghee or vegetable oil
1 teaspoon cumin seeds
1-inch cinnamon stick
2-3 green cardamom pods
4-5 cloves
1 bay leaf
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
Salt to taste
2 cups water
Fresh coriander leaves for garnish
Instructions
Rinse and Soak the Rice:
Wash the basmati rice under cold running water until the water runs clear.
Soak the rice in water for about 30 minutes. Drain and set aside.
Sautéing Aromatics:
In a large pan or pot, heat ghee or oil over medium heat.
Add cumin seeds, cinnamon stick, green cardamom pods, cloves, and bay leaf. Sauté until the spices release their aroma.
Adding Vegetables:
Add sliced onions and sauté until they turn golden brown.
Stir in green chilies, chopped tomatoes, and cashews or almonds (if using). Cook until tomatoes are soft.
Spices and Rice:
Add turmeric powder, red chili powder, and salt. Mix well.
Add the mixed vegetables and cook for a few minutes until they are slightly tender.
Now, add the soaked and drained rice. Gently mix to coat the rice with the spices.
Cooking the Pulao:
Pour in 2 cups of water and bring it to a boil.
Reduce the heat to low, cover the pan with a tight-fitting lid, and let it simmer for about 15-20 minutes or until the rice is cooked and the water is absorbed.
Fluff the rice with a fork, cover, and let it rest for 5 minutes.
Garnish and Serve:
Garnish the Veg Pulao with fresh coriander leaves.
