Fragrant Vegetable Pulao Recipe

Ingredients

  • 1 cup basmati rice

  • 1 cup mixed vegetables (carrots, peas, beans, corn)

  • 1/4 cup cashews or almonds (optional)

  • 2-3 green cardamom pods

  • 4-5 cloves

  • 1 bay leaf

  • 1/2 teaspoon turmeric powder

  • Salt to taste

  • 2 cups water

  • Fresh coriander leaves for garnish

Instructions

  1. Rinse and Soak the Rice:

    • Wash the basmati rice under cold running water until the water runs clear.

    • Soak the rice in water for about 30 minutes. Drain and set aside.

  2. Sautéing Aromatics:

    • In a large pan or pot, heat ghee or oil over medium heat.

    • Add cumin seeds, cinnamon stick, green cardamom pods, cloves, and bay leaf. Sauté until the spices release their aroma.

  3. Adding Vegetables:

    • Add sliced onions and sauté until they turn golden brown.
