For the Gobi (Cauliflower) Fritters:
1 medium cauliflower, cut into florets
1 cup all-purpose flour
3/4 cup cornstarch
1 teaspoon ginger-garlic paste
1/2 teaspoon red chili powder
Salt to taste
Water as needed
Oil for deep frying
For the Manchurian Sauce:
2 tablespoons oil
1 tablespoon finely chopped garlic
1 tablespoon finely chopped ginger
1/2 cup finely chopped onions
1/4 cup finely chopped bell peppers (capsicum)
2 tablespoons soy sauce
1 tablespoon chili sauce
1 tablespoon tomato ketchup
1/2 teaspoon vinegar
1/2 teaspoon sugar
Salt to taste
1/2 cup water
1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
Chopped green onions for garnish

For the Gobi (Cauliflower) Fritters:
In a mixing bowl, combine all-purpose flour, cornstarch, ginger-garlic paste, red chili powder, and salt.
Gradually add water to the dry ingredients, whisking until you have a smooth, thick batter.
Heat oil in a deep frying pan over medium-high heat.
Dip each cauliflower floret into the batter, ensuring it’s well coated, and then carefully drop it into the hot oil. Fry until the florets are golden brown and crispy. Remove and place them on a paper towel to remove excess oil.
For the Manchurian Sauce:
In a separate pan, heat 2 tablespoons of oil over medium heat.
Add chopped garlic and ginger, and sauté for a minute until they turn aromatic.
Add finely chopped onions and bell peppers and stir-fry for a few minutes until they are slightly tender.
Add soy sauce, chili sauce, tomato ketchup, vinegar, sugar, and salt. Mix well and let it cook for a couple of minutes.
Pour in 1/2 cup of water and bring the mixture to a simmer.
In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to make a slurry. Stir this into the simmering sauce to thicken it. Continue to cook until the sauce reaches your desired consistency.
Add the fried cauliflower florets to the sauce and toss them gently to coat them evenly.
Garnish with chopped green onions.
